Milk Chocolate-Chip & Walnut Cookie bars... because I can.
Saturdays are the day in this house where we allow ourselves to go crazy with the desserts. Usually, I do the same recipe every Saturday. A dark chocolate cake, with a caramel chocolate ganache, & by the evening, we've polished off the whole thing.
Because why the fuck not.... right?
Turns out, it's a wasted opportunity though. If I'm already making something sweet on a Saturday, maybe I should be making the most of it & coming up with a new recipe to be sharing. I mean, I used to share two or three recipes a week! Granted that was years ago. & for all intents & purposes I had stopped doing that because I moved & no longer had a photography studio to take glamorous photos of my creations. The perfectionist in me just wouldn't cave to the idea that I could post imperfect photos.
Fuck my inner perfectionist. Really. That tubby twat can shut up.
Any way. Cookie time.
Ingredients, makes 12:
100g - light brown sugar
115g - sugar
145g - unsalted butter, cold & cubed
1 - egg
1 tsp - vanilla
140g - gluten-free oat flour
140g - gluten free all purpose white flour
1/2 tsp - xanthin gum
1/2 tsp - salt
1/2 tsp - soda bicarbonate
1/2 tsp - baking powder
200g - milk chocolate (cut into large chunks)
100g - toasted walnuts, chopped
1. preheat the oven to 180C
2. grease your baking tin (20cm x 25cm) & line it with parchment paper. Set aside. Alternatively, you can use a 25cm cast iron skillet. It works just as well.
3. Place the butter & sugars into a bowl & cream them together using your whisk attachment, or your hand held beaters. arg in the egg & vanilla, & continue the process. You will want to stop once or twice & scrape down the sides of your bowl with a spatula.
4. add in all of the dry ingredients & beat together the mix until it's all combined.
5. using a spatula, fold in your chocolate & walnuts
6. transfer your batter into your prepared baking tin, & bake for 25 minutes. Remove from the oven & allow to cool before you cut it into bars.
